I'm using Red Hat 7.3 and KDE with a Epson C80 printer
When I print I get a gui window on the screen and one of the sections called print systems asks me if I want to use one of the following;
CUPS Print through an external program (generic) Generic UNIX LPD print system (default) LPR/LPRng Print System RLPR environment (Remote LPD server)
What are all these things? Is there a preferred one? Where can I read up on "Linux Print Systems"?

CUPS is the new Common Unix Printing System. It's quite good.
It's at www.cups.org.

Printing methods.
Is there a preferred one?
If you're just printing locally, prolly any one will do.
Where can I read up on "Linux Print Systems"?
How about at the Linux Documentation Project?

www.linuxprinting.org:
"Welcome to the LinuxPrinting.org website. This site contains a number of resources to help you with your printing problems under free operating systems as GNU/Linux, *BSD, Darwin and under UNIX-based systems as Solaris, Mac OS X, HP-UX, and others. It includes the Printing HOWTO, a printer support database, a project list, printer vendor scorecards, the Foomatic printing infrastructure, and more.
"Researching a printer purchase? Start with suggested printers, or browse the database.
"Looking for help? If the HOWTO and database don't help you, try asking a human in the forums."

I certainly prefer cups, since it seems the easiest to setup, and the most flexible for using the printer features, and kde has a very nice interface to it. Of course which one to pick depends onwhich printer server you are using and how you configured it.
