VT220 or xterm.
I avoid xterm-color as it frequently gives me grief on non-linux environments (when coming from a Windows client).
I also don't make much if any use of terminal colouring.
My mac apparently defaults to xterm-256color.
xterm is a pretty safe bet, IMHO.
